Fritos Corn Salad

  • 2 cans yellow kernel corn, drained
  • ½ red bell pepper, sliced and chopped
  • ½ green bell pepper, sliced and chopped
  • 1/2 purple onion, chopped
  • 1 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 5 ounces of chili cheese flavor Frito corn chips

Directions:

  1. Mix all the ingredients except the chips.
  2. Add the chips in before serving otherwise the chips will get soggy.

Note:  the red onion was a bit too strong for us (overpowered the salad, I think).  I will use Vidalia or Maui (or other sweet) onion next time.

I made a meal of just the salad; DH’s plate held a slice of ham, buttered roll, and another salad (!) consisting of celery-apple-onion.  However you choose to enjoy this salad – it is very good!
