Cheese Puffs

1 3-ounce package cream cheese

¼ pound sharp Cheddar cheese

½ cup butter (1 stick)

2 egg whites, stiffly beaten

1 loaf firm white bread, unsliced

 

 

Melt the cheeses and butter in double boiler, stirring to a smooth and velvety consistency.  Remove from the heat and fold in the egg whites.  Trim crusts from the bread and cut into 1-inch cubes.  Dip cubes into the cheese mixture until well coated.  Please on an ungreased cookie sheet and refrigerate overnight (or freeze and bake when needed).  Freezes very well.  Bake in a 400-degree oven 12-15 minutes until brown.

Makes 4 dozen.

These would have been very tasty – had I not burned them.  In my oven, baking for 7 minutes would have been sufficient.  I should have been paying better attention.
